The olive tree is native to the Mediterranean basin and San Niklaw Estate continues the tradition of olive tree growing and olive oil production in the territory of Zejtun. The set-up echoes the winemaking process in that it is a ‘boutique’ press type of operation There are about 450 olive trees on the estate grounds. In addition to old indigenous olive trees, other cultivars have been planted and include Frantoio, Carolea, Coratina, Ascolano and Picholin. To ensure a quality product, harvesting is performed by hand around October time and production is commenced without delay on the estate utilising state of the art Italian equipment. The end product from the blend of varieties is a fresh fruity extra-virgin olive oil that, in common with our wines, expresses a unique character derived from our terroir.
